We braved the airplane with our two kiddos yesterday and are over here visiting grandparents. My sweet mother-in-law always tries to trick me into eating sweets, and this time she did it. Ladies and gentlemen, 6 minute chocolate cake recipe is where its all at.

I am not much of a sweet tooth but my mother-in-law made these amazing cupcakes, they are not too sweet but are still rich and chocolatey. I went to inquire about the recipe and she went on to tell me that these delicious beauties only take 6 minutes to whip up and are egg and dairy free! TRUST ME you will love them.

And the icing will have you licking your fingers!!

And clearly I’m not the only fan!!

6 Minute Chocolate Cake

Ingredients

Cupcakes:

  • 1 1/2 cup flour
  • 1/3 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 1/2 cup oil
  • 1 cup water or cold coffee
  • 2 tsp vanilla
  • 2 tbsp vinegar

Cocoa Butter Cream Icing:

  • 1/4 cup soft butter or margarine
  • 2 cups icing sugar
  • 1/4 cup cocoa powder
  • 2-3 tbsp milk

Instructions

Cupcakes:

  1. Mix all the dry ingredients together
  2. In a separate bowl mix the oil, water and vanilla and stir into dry ingredients
  3. Mix to combine then stir in the vinegar
  4. Bake at 350 for 25 minutes
  5. Makes an 8x8 inch pan or 12 cupcakes

Icing:

  1. Cream butter with 1 cup of icing sugar
  2. Add cocoa, milk and vanilla
  3. Add remaining icing sugar
  4. Blend well
